We seem to have gone from summer one day to winter the next so what better way to warm up than with a delicious spiced soup. With Halloween just around the corner, we've added a spooky touch to it!
Time: 30 - 40 minutes
Ingredients:
1 tbsp Vegetable Oil
1 Large White Onion (diced)
2 Garlic Cloves (crushed)
1/2 tsp Ground Coriander
1/2 tsp Ground Cumin
1/2 tsp Chilli Flakes (depending on how much spice you like)
1kg Pumpkin (peeled & chopped into 2cm squares)
1l Chicken Stock
100ml Coconut milk or cream


1. Gently heat vegetable oil in a pan then add the diced onion. Slowly fry the onion until it is softened.
2. Add garlic, coriander, cumin and chilli. Cook for a further 2 minutes or until fragrant. Throw in the pumpkin and cook until slightly softened.
3. Add in stock. Bring to a boil then turn down to simmer for 12-15 minutes or until the pumpkin is properly softened.
4. Leave to cool slightly then blend in batches until smooth.
5. When the soup needs to be served, add back into a pan, heat up and stir in cream. Season with salt and pepper.
6. To serve, put a dot of cream in the center then proceed to draw a circle around the dot and another circle around that circle and so on. Take a tooth pick and gently draw lines from the dot in the center outwards and continue to go round so you have the pattern of what looks like a spiders web. Garnish with some fresh parsley and serve with crusty bread.
