1. Preheat oven to 180°c or gas mark 4. 2. Cream the sugar and butter together, then beat in the egg until light and fluffy. 3. Fold in the flour and cinnamon then place in a cake tin. 4. Place in the preheated oven for 20 minutes or until the sponge is cooked then the allow to cool. Once cool crush and place into 10 dishes. 5. Make jelly as per manufacturers instructions then pour over the sponge. Drain the mandarins and place into the jelly mixture. Allow to set in the fridge. 6. Once set, pour on the custard, whip the cream and pipe on top of the custard before serving.
