Rainbow Chocolate Cupcakes

Serves: 24

Time: 45-50 minutes

Ingredients for the cupcakes:
40g Cocoa Powder
200g Plain Flour
2 1/2 tsp Baking Powder
280g Caster Sugar
80g Unsalted Butter
2 Eggs
240ml Milk
1/2 tsp Vanilla Extract

Ingredients for the icing:
250g Unsalted Butter
500g Icing Sugar
1/2 tsp Vanilla Extract
1-2 tbsp Whole Milk
Red, Orange, Yellow, Blue Gel Food Colouring

1. Pre-heat your oven to 160c (fan).
2. Whisk together cocoa powder, flour, sugar, baking powder and butter.
3. Once everything is combined. In a separate bowl, mix in your milk, eggs and vanilla extract together. Slowly add this in the bowl with your other ingredients. Continue whisking until the mixture is smooth with no lumps.
4. Spoon mixture into paper cake cases and cook for 20-30 minutes. Check your cakes are done by inserting a skewer into the centre of one cake which should come out clean.

How to make the icing:
1. Leave the butter out of the fridge to soften slightly. Once softed, whisk up until it is smooth.
2. Slowly at the icing sugar and whisk until you have a smooth consistancy then add the vanilla extract.
3. If the icing consistancy is too thick to pipe, add a little milk bit by bit until the icing is at an ideal consistancy.
4. Split icing evenly into 6 bowls. We want to create 6 different colours; red, orange, yellow, green, blue and purple. Take the gel food colouring and add a tiny amount of red food colouring to one bowl, mix and add more colouring until you have reached a bright red colour.
5. For orange, add a small amount of red and a small amount of yellow gel food colouring and mix until you have a bright orange colour. Continue with the rest of the bowls. Take a piping bag for each colour and decorate your cupcakes as you wish. We added some rainbow coloured sprinkles too!
