Chocolate Fudge Cake

Can anyone resist a big piece of chocolate fudge cake? We know we can't. You wont regret baking this chocolatey, indulgent goodness.

Serves: 8-10 (depending on how much you love cake - we'd eat the entire thing if it was acceptable)!
Time: Hour - hour 15

Ingredients for the cake:

Butter for greasing
175g Self-raising Flour
25g Cocoa Powder
1 tsp Bicarbonate of Soda
150g Caster Sugar
2 tbsp Golden Syrup
2 Large Eggs (beaten)
150ml Sunflower Oil
2 tsp Vanilla Extract
150ml Semi Skinned Milk

Ingredients for icing:

100g unsalted butter
225g icing sugar
4 tbsp cocoa powder
2 - 3 tbsp milk

Decoration:

Chocolate bars to create chocolate curls (milk, white, dark chocolate)

1. Heat oven to 180C, 160C fan or gas 4. Lightly grease two 18cm loose-bottomed cake tins with butter.
2. Sieve flour, cocoa powder, bicarbonate of soda and caster sugar into a large bowl and mix well.
3. Make a well in the middle of your mixture and add golden syrup, large eggs, sunflower oil, vanilla extract and milk. Whisk the mixture together until smooth.
4. Divide the mixture into the two cake tins and place in the oven for 25-30 minutes, or until a skewer comes out clean when inserted into the middle of the cake.
5. Leave to cool for 5-10 minutes then place cakes onto a rack to cool completely.
6. Whilst you wait, start making your icing. First sieve icing sugar and cocoa powder into soft unsalted butter and mix well.
7. Gradually add the milk and continue mixing until you have smooth, spreadable icing. It shouldn't be too runny!
8. Once the cakes have cooled completely spread the top of one cake with the icing. Place the second cake on top, use the rest of the icing to spread around the outside and on top of the cake.
9. To make the chocolate curls. Take the chocolate bars whole and use a potato peeler to gently peel chocolate curls. Use any chocolate that you prefer or a mix of white, milk and dark chocolate! Sprinkle the chocolate curls on top and voila!
